Creamed Potatoes

INGREDIENTS Potatoes, Onion, Butter, Cream or Milk

DIRECTIONS

  1. Cook two peeled, cubed potatoes in the microwave ~4-5 minutes on high.
  2. Sauté 1 medium onion (diced) in butter or olive oil and add ~1 C of cream or a mix of cream and milk.
  3. Season with salt and pepper.
  4. Simmer briefly, then add cooked, potatoes and continue to heat on low until ready to serve. As they are eaten, the potatoes can be mashed with a fork into the cream and onion sauce.
